This King’s Crown is inspired by the traditional Couronne des Rois, a festive brioche enjoyed in the south of France during Epiphany.
The dough is enriched with a generous amount of French butter and slowly fermented to develop flavour and softness.
It is delicately scented with orange blossom water and generously decorated with homemade lemon, lime and orange candied fruits.
Each crown is shaped and baked by hand, then finished with pearl sugar for a lightly crunchy contrast.
Every piece contains a hidden fève and comes with its golden paper crown, in keeping with tradition.
