Inspired by the traditional Pithiviers, this King’s Cake is a celebration of classic French pâtisserie.

 

The puff pastry is made entirely in-house using the inverted method — a demanding technique that requires time, precision and patience, and results in exceptional flakiness and lightness.

 

The filling is a pure almond cream, deliberately not cut with pastry cream, to preserve depth of flavour and authenticity.


Each cake is finished with a unique hand-scored decorative pattern, making every galette one of a kind. Produced in very limited quantities, each piece reflects the rhythm, care and craftsmanship of true artisanal production.

 

This is not an industrial galette, but a true pâtissier’s King’s Cake, made for those who appreciate craftsmanship and timeless techniques.
