An éclair (/ˈklɛər/,[1] /ɪˈklɛər/;[2] French pronunciation: ​[e.klɛʁ]) is a pastry made with choux dough filled with a cream and topped with a flavoured icing. The choux dough is typically piped into an oblong shape with a pipping bag and baked until it is crisp and hollow inside.


Once cool, the pastry is filled with custard (crème pâtissière), then iced with homemade fondant icing.


Other fillings can be vanilla, coffee.
